Overview of The French Culinary Institute

The French Culinary Institute (FCI) is a world-class culinary school located in the SoHo neighborhood of New York City. Founded in 1984, the school blends classic French techniques with American inventiveness in a fast-paced curriculum. Using a rigorous hands-on approach, The FCI propels its students into the workplace after just six intense months of classes (nine for those who train at night).

Students sharpen their skills with real-time cooking at L'Ecole, the school's critically-acclaimed restaurant in the heart of New York City. The FCI offers top-notch job placement and many graduates have gone on to rewarding employment at some of the world’s best restaurants and bakeries.

Areas of Study

The FCI offers three major career programs, as well as dozens of amateur and advanced courses in a wide variety of culinary fields. Culinary students cook in a professional restaurant for 20 weeks as part of their course work. Higher level culinary students rotate through all the stations of a kitchen and train under the watchful eye of chef-instructors at a highly rated restaurant. Career programs include the following:

  • Classic Culinary Arts (6 months by day, 9 by night)
  • Classic Pastry Arts (6 months by day, 9 by night)
  • The Art of International Bread Baking (8 weeks)

The French Culinary Institute Admissions

The admission process is fairly easy for applicants to navigate. A completed application for admission can be submitted online or by mail or fax. Once the application and deposit is received, an admission representative will contact the applicant to answer any questions and assist in the rest of the admission process.

The French Culinary Institute Faculty Quality

The faculty is made up of world-class chef-instructors who are outstanding and inspiring teachers. The classroom environment is dynamic, inspired, and sometimes electric. The FCI has worked closely with the director of the highly regarded Klingenstein Center at Columbia University Teachers College to help its instructors develop powerful communication and teaching skills.

The French Culinary Institute Student Body

Student ages cover a very broad spectrum. 18-year-old high-school graduates work and study alongside restaurant owners who are in their 60s. Culinary arts programs are approximately 55% male whereas pastry arts classes are approximately 60% female. Bread-baking classes are fairly evenly divided.

The French Culinary Institute Student Life

The FCI offers a variety of low-cost secure housing options only a short subway ride away from the campus. Availability is on a first come, first served basis. The school's facilities are spacious, abundantly appointed, and designed especially for hands-on instruction in small classes. Students are afforded the unique opportunity to check out live demonstrations on a weekly basis from high caliber celebrity-chefs and food experts at the FCI's on-campus International Culinary Theater.

The FCI's location, in the heart of one of the most popular and dynamic neighborhoods in New York, is on the pulse of the culinary world and the city's freshest restaurant scene. The FCI is situated literally steps away from Chinatown, Little Italy, and several of the city's best farmers' markets.
